The Air & Defence College is a new concept in education offering real industry job opportunities and input by guest speakers, site visits and projects to start your career in the aerospace sector. The Air & Defence programme is designed around a full week at college, to include enrichment activities to include visits to RAF bases and timetabled periods of fitness in preparation for a role in the defence industry.
If you want to pursue a career in a fine dining environment then this is an excellent place to start. This course will provide you with the underpinning skills and knowledge to progress through the levels of food preparation, service and other workplace essentials such as menu design and food costings to a high standard. During this programme you will explores theoretically and practically the following topics at an appropriate level to begin working in a professional environment: Developing Skills for Employment; Health and Safety in Catering; Healthier Foods and Special Diets; Preparing and Cooking a Variety of Foods; Kitchen Operations; Costing and Menu Planning; Effective Team Work; Customer Service; Serving Food at the Table and Silver Service.
You will need to have a minimum of 2 GCSEs at a minimum of Grade 4, including English Language and Mathematics and a VRQ Level 2 in Professional Cookery or appropriate industry experience. You will also be required to attend a Welcome Day event (which includes a practical activity and interview) and provide a reference (from an employer or a recent school/college report).
Assessment is a combination of online testing, practical craft assessments, assignments and short answer tests. There is an end of year formal practical examination.
Successful completion of all elements of the Air and Defence course and meeting the current recruitment criteria of the RAF will facilitate fast-tracking into the Royal Air Force.
