The annual Awards For Courage organised by Newark Rotary Club took place on Monday.
Ruby was praised for the way she has tackled her ongoing health issues and her life, including a battle to conquer anxiety as well as wellbeing issues caused by her illness.
She was diagnosed with an under-active thyroid when she was 13 which has resulted in weight issues.
Business lecturer Amanda Bradford said “I was so proud to attend the awards to speak about Ruby.
“Ruby tackles her challenging health issues in the same way she tackles life - with a positive and relentless spirit and a big smile on her face.
“She allows nothing to hold her back, challenges herself and makes the most of every opportunity.
“Her ambition in life is to be a successful hotelier – I have no doubt that Ruby will achieve this and so much more.”
Ruby has accepted an offer to study a hospitality management degree in Plymouth which starts this September.
